Cajun Shrimp Pasta




Last night i made Cajun Shrimp Pasta for dinner.
This is one of my husband's favorite meals that i cook.
We used to to eat at Red Lobster and always ordered Cajun Shrimp Pasta with Cheddar Biscuit.
Since we got tired waiting on the line for hours (gosh,they're always busy) and to save money, i did a little research on the internet and made my own Cajun Shrimp Pasta (i always use linguine). It turned out pretty well and my husband liked it.
The only thing that was missing was the cheddar biscuit.
I like to make my own meal,so i can adjust the ingredients to my own taste. I love my Cajun Seasoning hot and spicy.
Here is the recipe:
Ingredients:
1 pound linguine, salt, ground black pepper, 4 Tbs olive oil, 1 chopped white onion, 4 cloves of finely chopped garlic, 1 pound - about 25 - shrimp (shelled and deveined, tails off), 1/2 teaspoon of dried, crushed thyme, 1 teaspoon red pepper flakes, 1/8 teaspoon cayenne, 1/2 cup heavy cream, 2 tablespoon tomato paste, lemon juice, dry parsley.
How to:
(Recipe serves 4 people. Make necessary adjustments for larger quantities)
Cook the pasta,set aside.
Place the shrimp in small mixing bowl. Dust shrimp with cayenne, salt, pepper and thyme. Toss and let sit.
Saute onion until soft, 3-4 minutes.
Add chopped garlic and red pepper flakes. Stir for 30 seconds and do not let the garlic burn. Add tomato paste, heavy cream and a small pinch of sugar. Stir ingredients and continue to cook until blended. Add shrimp and cook 2 minutes. Add pasta and toss.
Allow the shrimp to finish cooking, another 1 to 2 minutes. Add parsley. Season to taste with additional salt and pepper, if desired. Remove from heat, squeeze lemon juice over pasta and serve.
